GRILLED PEACH SALAD WITH LEMONY MINT VINAIGRETTE
1 small can of corn (or on the cob)
1/4 cup olive oil
1 1/2 tsp honey
1/4 lb prosciutto
1 garlic clove
1 handful fresh mint
Salt and pepper to taste
1. Cut the peaches in half, remove the pits and then cut them in quarters. Lightly salt and pepper them. Brush them with olive oil.
2. Put the peaches on the grill and flip after 3 minutes, making sure both sides get those nice grill marks.
3. While the peaches are on the grill, make your vinaigrette. Put the juice and zest of one lemon, garlic clove, mint, oil, honey, salt and pepper into the food processor and pulse until well combined.
4. Remove your peaches from the grill and build your salad. Start with the arugula, then add the peaches, corn, prosciutto bundles, and finish with the vinaigrette. Toss the salad for best flavor results.
